Avocado Salad Dressing

A salad dressing with healthy fats , a perfect complement to your vegetable salad.

Equipment

  • 1 Blender

Ingredients
  

  • 1 medium ripe avocado peeled and sliced
  • 1 juice from one lemon and/or lime Lime or lemon juices may be combined or used seperately
  • 1/3 - 1 cup water More water may be added for desired consistency

Instructions
 

  • In a blender, place the peeled and sliced avocado.
  • Add lemon and lime juices and water to make it thick but pourable.
  • Add optional honey and salt to taste.
  • Serve immediately. (color darkens, longer it sits).

Notes

Bonus Tips for Variation
Add ½ small cucumber, one handful fresh basil, one small container of plain, non-dairy yogurt, 2-3 cloves garlic, and water to desired consistency.

Banana Oatmeal Cookies

Ingredients
  

  • 11/2 cups mashed bananas
  • 1/2 orange or tangerine , juice only (optional)
  • 11/2 cup oats
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped raisins or dates
  • 1/2 tbsp vanilla extract

Instructions
 

  • Mash the bananas and mix with the juice from the orange or tangerine to prevent browning.
  • Mix all the ingredients together in a bowl using a spoon. Allow the batter to sit for 10 minutes.
  • While the dough is resting, pre-heat the oven at 350°F and line a large baking sheet with a silicone baking mat or parchment paper. If you don’t have those, grease the pan.
  • Use a small cookie scoop or drop the dough by the spoonful onto the baking sheet. Flatten with a fork.
  • Bake until firm on the top and golden brown on the bottom, 15-30 minutes. When using a silicone mat, it is on the longer side.
  • Transfer to a wire rack to cool.
